Project Cookbook #2

Friday was Project Cookbook #2.  What did we make you ask? Greek Salad and Chicken Souvlaki.  And boy, was it delicous and healthy too!  Some of you may not know that I am a tad bit Lebanese, that being said, I love dishes with olive oil, kalamata olives and of course, pita!  Mediterranean food is probably a favorite of mine.

There is no recipe for this one.  We cooked the chicken that we marinated overnight, in a frying pan.  For a special treat we also toasted the pita in a pan as well with a little olive oil (extra-virgin of course!) It makes the pits warm and soft, with a slightly crispy outside.  Yes, you should try it, it is amazing. Seriously.
