Project Cookbook #1

For our first official cooking adventure we decided to make Spaghetti alla Carbonara using a recipe from the amazing Chef John at Food Wishes.  Check him out, there are some great and simple recipes, many delicious!

Here's the recipe below:

Instead of bacon, we did decide to splurge a bit and get some Pancetta.  
Definitely a different flavor than the bacon would have had. 
We had both the pasta and pancetta cooking at the same time.  
While Jeremy tended both, I made garlic bread as well.  It just goes so well with pasta! 
One problem we ran into was the moving handle on the pot: I'm left handed and he's right handed...lots of switching as we both took turns checking and stirring the pasta and pancetta.  

Here is our final result:
This is a great beginner recipe and a wonderful change from the usual spaghetti and tomato sauce.  Also, the use of egg is much lighter than a cream sauce.  Just as delicious and without as much guilt!
